Paddy Clatworthy (Owner)
Paddy has been successfully running The Olive Tree Restaurant since 2004. His career in hospitality dates back to 1996, when he trained in America at one of the country’s leading hospitality and entertainment venues and his passion for the industry was born.
Nowadays, he ensures a smooth delivery of service on a daily basis, being fully aware of the importance of great customer care with a strong emphasis on value for money which is highlighted in the continual success of the restaurant.
Tracey Tubb (Head Chef)
Tracey has been successfully leading a brigade of chefs at The Olive Tree since 2009. Always around the business on a daily basis, she knows only too well the importance of consistency and quality in every menu she designs, launches and manages.
Her positivity and happy persona resonates throughout the building, and this shows in the number of regular customers we have from early morning breakfast, through to lunch, our world famous Afternoon Teas and onto our evening dinner menu.
Tracey Bell (Sous Chef)
Tracey has been firmly rooted in the backbone of the business since 2012 and is very much the second half of our successful kitchen double act, comfortably running the kitchen if our Head Chef is absent.
Known very much for her artistic flair, creativity and consistency, she is a firm favourite with our regulars and new customers alike.
Laura Wilkins (Front of House Server)
Laura has been an integral part of the team since 2019. Her natural, polite, warm and engaging persona makes her a favourite amongst regulars.
Having spent her earlier years travelling, she’s a font of knowledge when it comes to countries of the world and will happily wax lyrical about the worlds best scuba diving sites!
If she’s not at work, she’ll be sure to be spending time with her beloved dogs.
Evie Clatworthy (Front of House Server)
With her parents owning the business, Evie has grown up in the world of hospitality and her professional approach to customer care is second to none.
She knows and understands what constitutes “the perfect visit” and will go out of her way to ensure this is delivered. Having secured a place at Manchester University in Sept 2025, Evie is currently on a gap year with adventures to look forward to!
Kez Stenning (Front of House Barista Queen!)
Having graduated from Manchester University with a 1st class honours in Sociology and criminology, Kez is a familiar face on the UK music festival scene, creating delicious coffees.
But when the season finishes, she’s to be found firmly tied to our coffee machine creating wonderful delights for our regulars!
Chloe Dean (Front of House Server)
Chloe is our latest new recruit and with her second-to-none Barista skills she has hit the ground running with her hospitality experience.
She graduated from Falmouth University in the summer of 2022 with a 2:1 in Acting, subsequently spent a little time travelling around South East Asia, and her acting career is taking off at full speed.
She’s to be found either serving a delicious flat white or mixing with the stars on various drama sets. Her latest adventure will see a return trip to Lapland, but we hope to have her back soon!
Izzy Russell (Front of House Server)
Joining the team back in the summer of 2021 she has evolved into a wonderful front of house server that any establishment would be delighted to have in their team.
Currently studying Performing Arts at Chichester University, Izzy certainly brings this passion to the workplace and is reflective in her style of service!
Lily Clatworthy (Front of House Server)
Youngest of our two daughters, Lily is studying for her A Levels at Stroud Sixth Form.
Having spent the summer volunteering at schools in Ghana, Africa and more recently enjoying her French exchange in Nantes, she has certainly inherited our passion for travel!
Lily has worked in our kitchen for 2 years, so she is now to be found building on her hospitality skills front of house.
